K. So I know that many of us out there love to have our fresh-from-scratch baked goods (like our famous homemade rolls made from The BEST Roll Dough Recipe Ever). But friends, I also live in the real world and sometimes a mama ain’t got time for that, especially when you child tells you the morning of his school auction that he needs 2 dozen cookies. Ugh. So that is why I’m sharing cake mix cookies. And today I’m going to tell you how to make quick cake mix cookies and then how to transform these cookies into Crazy-Easy Homemade Ice Cream Sandwiches. These cookie ice cream sandwiches are quick and oh so tasty and will make you feel like you went to The Baked Bear and had one of their yummy cookie ice cream sandwhiches. I guess in a way they are only semi-homemade, but they are a fun and delicious treat that is good enough for a party or even just a summer snack. My kids loved them.

For this recipe you will need:
Here are the basic ingredients to you need to create these easy cookie ice cream sandwiches. The first part involves making cake mix cookies, so you will need the ingredients for that also. See more about that in the section below. I used Betty Crocker Chocolate Fudge Cake Mix. This to me tasted the most like the chocolate of an ice cream sandwich from the store. I also used peppermint ice cream. You can use whatever flavor you want.
Scoop ice cream onto one cookies. Easy does it . . .
Top it with another cookie. It already looks super delish, right?
Sprinkles are totally optional but they add so much fun to this easy dessert. Kids will love helping with this part. Roll your cookie sandwich in the sprinkles, helping them stick to the ice cream.
Now devour the goodness of it all . . . or save it in the freezer to savor later.
