Crazy-Easy Homemade Ice Cream Sandwiches

K. So I know that many of us out there love to have our fresh-from-scratch baked goods (like our famous homemade rolls made from The BEST Roll Dough Recipe Ever).  But friends, I also live in the real world and sometimes a mama ain’t got time for that, especially when you child tells you the morning of his school auction that he needs 2 dozen cookies.  Ugh.  So that is why I’m sharing cake mix cookies.  And today I’m going to tell you how to make quick cake mix cookies and then how to transform these cookies into Crazy-Easy Homemade Ice Cream Sandwiches.  These cookie ice cream sandwiches are quick and oh so tasty and will make you feel like you went to The Baked Bear and had one of their yummy cookie ice cream sandwhiches.  I guess in a way they are only semi-homemade, but they are a fun and delicious treat that is good enough for a party or even just a summer snack.  My kids loved them.

I made these ice cream sandwiches just a couple of months ago as part of our family Valentine’s Day mystery dinner.  They were delish.  If you want to know more about this fun family tradition and get the free printables {CLICK HERE}.

For this recipe you will need:

Here are the basic ingredients to you need to create these easy cookie ice cream sandwiches.  The first part involves making cake mix cookies, so you will need the ingredients for that also.  See more about that in the section below.  I used Betty Crocker Chocolate Fudge Cake Mix.  This to me tasted the most like the chocolate of an ice cream sandwich from the store.  I also used peppermint ice cream.  You can use whatever flavor you want.

Cake Mix Cookies

1/2 cup canola oil
1 egg
1 box of cake mix, any flavor

Preheat oven to 350 degrees.  In a medium mixing bowl, combine the oil, egg, and cake mix together.  Mix well.  Dough will be kind of thick.  Roll about 1-2 tablespoons of dough into a ball.  Place dough balls on a cookie sheet.  To make a flat cookie that will work well for an ice cream sandwich, gently flatten each dough ball with the bottom of a drinking glass.  Bake at 350 for 8-10 minutes, depending on your oven.

Let cookies cool before making your cookie sandwiches.  Now onto the rest of the goodness . . .

While your cookies cool, get your ice cream out to soften up a little.

The ice cream needs to get to the soft and malleable stage.  Not too hard and not too melty.

Pour your sprinkles into a bowl for easy use.

Scoop ice cream onto one cookies.  Easy does it . . .

Top it with another cookie.  It already looks super delish, right?

Sprinkles are totally optional but they add so much fun to this easy dessert.  Kids will love helping with this part.  Roll your cookie sandwich in the sprinkles, helping them stick to the ice cream.

Now devour the goodness of it all . . . or save it in the freezer to savor later.

Have a blissful day!  Share this treat with someone you love!

Definitely full of kid vibes but adults will like it too. A who-dun-it mystery. We laughed out loud a lot more than we expected!

Are you wondering if the Thanksgiving Point Festiv Are you wondering if the Thanksgiving Point Festival is worth visiting this year? Here’s a look at what we saw today.

We’ve had a lot of up and down weather so I wasn’t surprised to find a lot of the tulips already finishing up their season on April 23. BUT we still found quite a few areas with some big, beautiful blooms and it was a peaceful walk with less crowds. There were signs reminding us that more tulips were going to be blooming soon, so maybe wait a week or so if you want to see those new tulips.

Thank you @utahstulipfestival for a fun visit! @thankspoint @theashtongardens #tulipfestival #utahtulipfestival #tulipseason #springinutah #traveltips

It’s was the perfect day to see a rom com and my hubby was a good sport to see a play called “Hallmarked” (NOT his favorite play so far). The play definitely lives up to its name—lots of predictable moments, plot holes, and cheesy lines. 🫤 But when it makes fun of itself, you will laugh and leave feeling lighthearted.
