Pomegranate Christmas Salad with Pink Poppyseed Dressing

A beautiful holiday salad recipe complete with a delicious homemade poppyseed dressing.
 
Staying healthy during the holidays can be really hard!  Luckily for all of us, I have a Pomegranate Christmas Salad recipe for you from our recipe contributor, Amy J!  It’s super easy, and delicious.  So you can have something healthy during this season that tastes amazing!

Pomegranate Christmas Salad

BEST CHRISTMAS DINNER SALAD EVER!
 
This salad has been famously made by my good friend Janet B. for all 13 years I have known her.  It is simple. It is light.  The flavor is sweet and savory with the pop of tiny pomegranate seeds and the rich sweet crunch of the toasted almonds.  The dark green of the leaf lettuce is a perfect backdrop for the bright red pomegranate seeds!  Gorgeous! 
Casual or elegant, this salad is a family AND a party pleaser.  If you dare take this to a party, your friends will ask/beg/clamor/fight for this recipe!

P.S.  IF…big IF…there are any leftovers after your party…when you are on your way home…don’t be ashamed to eat the salad out of the bowl with your fingers.  Don’t say you won’t…you will!  Lots of very professional, polished, elegant, no-nonsense women I know have done this….because this salad is to-die-for!  Enjoy!
 
Let’s get this party started!
 
 
 
Candied almonds are the BEST and so EASY!     In a small saucepan, sprinkle 3 Tble sugar and a pinch of salt over almonds. 
 
 
 
 
 

 

Stir while cooking over med heat until almonds are coated and sugar is dissolved and caramelized.  Stir constantly to coat almonds.  Watch carefully these can burn fast.  Pour onto a plate to cool.  Sample a few…these are crazy good! 

 
 
 
Seed the pomegranates:  Cut each in half and submerge in large bowl of water.  Use your fingers to carefully dislodge the tender seeds.  Done!  Yes…my 10 year-old did this for me…so easy!  
 
NOTE: The water keeps the seeds from popping out, flying across the kitchen and splatting, with a perfect red-staining mess, on your favorite white skinny jeans.  You’re welcome!

Make dressing:  Put first 5 ingredients in a blender and blend on high until dressing is pink from the red onions.  While blender is blending on high speed, open top of blender and pour oil in SLOWLY allowing only a slight stream of oil to flow.  This emulsifies the oil and vinegar mixture so the dressing will not separate.  YAY!  Stir in poppy seeds.  Done!
 
 
 
 
Toss all ingredients and dressing together and enjoy!

Fresh and healthy way to enjoy Christmas Dinner! Perfect with the pink poppyseed dressing!

Ingredients

Salad Ingredients

  • 2 heads red
  • leaf lettuce, washed, chopped
  • 2 pomegranates,
  • seeded
  • 4 oz toasted,
  • sugared, slivered almonds

Sweet/Savory Poppy Seed Dressing

  • 1/3 cup vinegar
  • 1/3 cup sugar
  • 1 tsp salt
  • 1 tsp mustard
  • 2 Tble minced purple onion
  • 1 cup vegetable oil
  • 1 Tble poppy seeds

Instructions

  1. *To sugar the

  7. *Seed the
  8. pomegranates:  Cut each in half and
  9. submerge in large bowl of water.  Use
  10. your fingers to carefully dislodge the tender seeds.  Done!
  11. How easy was that!

Sweet and Savory Poppyseed Dressing

  1. Blend first 5 ingredients together until mixture turns pink
  2. from the purple onion being incorporated.
  3. While blender is blending on high speed, open top of blender and pour oil
  4. in SLOWLY allowing only a slight stream of oil to flow.  This emulsifies the oil and vinegar mixture
  5. so the oil will not separate.  YAY!  Stir in poppy seeds and drizzle over
  6. salad!  Delish!
  7. Just before serving toss all ingredients in a large glass bowl.  Drizzle desired amount of Sweet/Savory Poppy Seed Dressing over top.  Give it a stir
  8. and serve immediately!

Enjoy a themed dinner while you watch a fun movie. The menu goes a long with the movie and is served to you while you are watching the scene it relates to. We saw Holes (which we love!) but there are many others to choose from. Our menu had a fun drinks, appetizers, main course, sides, and dessert. I left satisfied and had a fun time with my hubby and our friends.

We’ve had a lot of up and down weather so I wasn’t surprised to find a lot of the tulips already finishing up their season on April 23. BUT we still found quite a few areas with some big, beautiful blooms and it was a peaceful walk with less crowds. There were signs reminding us that more tulips were going to be blooming soon, so maybe wait a week or so if you want to see those new tulips.

Valentine’s Day with my man at the NEW Miller Fami Valentine’s Day with my man at the NEW Miller Family Beehive Stage @halecentretheatre . It’s was the perfect day to see a rom com and my hubby was a good sport to see a play called “Hallmarked” (NOT his favorite play so far). The play definitely lives up to its name—lots of predictable moments, plot holes, and cheesy lines. 🫤 But when it makes fun of itself, you will laugh and leave feeling lighthearted.
