How to Make Sweet Chili Chicken in Your Instant Pot

1. Spray inside of Instant Pot with nonstick cooking spray. Toss in chicken and add 1/2 cup water. Close lid on your Instant Pot. Make sure your quick-release button is closed. Set Instant Pot to HIGH PRESSURE and set timer for 20 minutes. (P.S. You might also want to start your rice right about now. This chicken is ready in a flash and you will not want to wait for rice! HA!)
2. It will take about 10-ish minutes for your Instant Pot to come to full pressure. Once it comes to full pressure, it will automatically start cooking on high pressure for 20 minutes. Once cooking is completed, push the Quick-Release button to let steam and pressure escape. Open lid and break chicken into pieces. The chicken will be AMAZINGLY tender! Love my Instant Pot!
3. Stir corn starch and water together until smooth. Stir corn starch/water mixture into chicken.
4. Grab your bottle of sweet chili sauce and add it to chicken.
5. Switch Instant Pot to the “Saute” setting. Stir chicken while the sauce cooks and begins to coat the chicken. This only takes a few minutes! Chicken is done when sauce looses it cloudiness.
6. Toss in chopped red pepper and pineapple! Give it a good stir and serve over hot rice! ENJOY!

2 lbs chicken
½ cup water
*Cook on high pressure 20 minutes. Quick release pressure. Open lid and break chicken into pieces.
¼ cup corn starch
½ cup water
1 bottle Sweet Chili Sauce about 20 oz
1 red pepper, chopped
1 can pineapple tidbits
