How to make a delicious and quick Taco Salad with and easy taco dressing and Doritos to top it all off!

*This is a TOTAL kid favorite at our house. Our six year-old comedian chose this for her birthday dinner this year….how easy is that?! It’s a super fast, delish spring and summer dinner! I often serve it with beans and rice to add substance and fill the hungry athletes!

DORITOS TACO SALAD
1 can red kidney beans, drained
1 can corn, drained
1 can olives, drained, sliced
1 cup shredded cheese
1-2 tomatoes, chopped
2 heads leaf lettuce, chopped
1 large bag Doritos, crushed
TACO DRESSING
2 Tble mayonnaise
1 Tble Taco seasoning mix
milk, as desired
*Stir mayonnaise with taco seasoning and add enough milk to make desired consistency.
*Toss kidney beans, corn, olives, cheese, and tomatoes with lettuce. Toss with desired amount of dressing. Toss with crushed Doritos and SERVE IMMEDIATELY! ENJOY!
NOTE: I often ADD chopped, grilled garlic chicken, cilantro, and avocado to fancy it up….CRAZY GOOD!
