Quick and Easy Sugar Cookie Bars

Sugar Cookies.  Yes, I know I keep telling you that we adore them.  Yes, I know I keep reminding you that my Simple Sugar Cookie recipe is so easy and soft and yummy (because it really is).  And yes, I know that secretly you love sugar cookies too.  Which is why I made these Quick and Easy Sugar Cookie Bars.  Because sometimes you don’t have time for all the flour mess or the cookie cutters.  This is a fast sugar cookie recipe to make when you need to treat a holiday crowd (or just a fast way to treat yourself . . . ahem, I mean, your family.
Don’t these cookie bars look fun?  Did I ever tell you that I truly love sprinkles–especially these little colored ball kind.
This recipe uses my Simple Sugar Cookie recipe (are you surprised?)

Here’s what you do:

Make the sugar cookie dough as directed in my recipe.  Then follow these steps:

1. Line a large cookie sheet with parchment paper or grease it as desired.

2. Plop all your sugar cookie dough onto the pan.  Press it down.

3.  Use your rolling pin to help evenly spread out the sugar cookie dough throughout the entire pan.  You can press down with your hands too.

4.  Keep the thickness about the same as you would if these were individual sugar cookies.  Not too thin or too thick. It may overlap on the edges in some areas or not be long enough in others.  Cut off any excess and use it to fill in any empty spots (don’t eat it, though you will want to, I know).

Bake at 350 for about 10-15 minutes.  Watch it though.  Every oven is different.


You want the cookies to look lightly golden

When it cools, smother it with frosting.  My cream cheese frosting recipe is delish (and easy)!
And don’t forget sprinkles.


Cut into cookie bars.
