Mandarin Chinese Chicken Salad

Hi all!  It’s Amy again.  Ready for another summer salad FAVE?  It’s Mandarin Chinese Chicken Salad with fried wontons!  During the winter months we have soup once a week, but when the weather changes, we switch our soup night to a salad night.  My family loves Asian salads, so I make different varieties and this keeps everyone happy.   This Mandarin Chinese Chicken Salad is a TOP FAVORITE!!  The kids love the sweet and tangy dressing and the rich, crunchy wontons.  Paired with tender chunks of savory chicken, it’s a TOTAL FAMILY DINNER HIT and a great summer dinner idea!  Even my two year-old “house wrecker” loves this.  Now, if we could just get him to stop eating all the toothpaste!

Time to make this beautiful salad.  Let’s roll…..

 

 

 

 

 

 

*A secret to cooking chicken in a flash:  I grab 5-6 frozen chicken tenders out of my freezer.  I place them in a frying pan, lightly coated with oil over medium-high heat.  Sprinkle chicken tenders with salt, fresh pepper, and garlic powder.  Cover and let chicken sizzle.  When bottom is golden-bronzy brown, turn chicken, cover and let sizzle on other side.  Turn heat down to medium and let chicken cook while you prepare the veggies and fry the wontons.

 

 

 

 

 

 

*Cut wonton wrappers into strips and fry until golden brown.

 

 

 

 

 

 

 

 

Wash and chop all veggies.

 

 

 

 

 

 

 

 

Toss all together with the Mandarin Salad Dressing.  DELISH!

 

 

 

 

 

 

 

Mandarin Chinese Chicken Salad with Fried Wontons 

 

1/2 head red cabbage, chopped

1/2 head green cabbage, chopped

1 head green leaf lettuce, chopped

3 green onions, chopped

 

16 oz chicken, cooked, cut into bite size pieces

 

1 -15 oz can mandarin oranges, drained, set aside

½ cup slivered almonds, toasted

1 Tble toasted sesame seeds

 

1 small package of wonton wrappers, sliced into strips and fried

*Cut wonton wrappers into strips and fry until golden brown.  Wash and chop all veggies.  Toast almonds by putting them on a baking dish in a 350 degree oven for 15 minutes.  If sesame seeds do not come toasted, toss them in with the almonds.

 

Toss all together with the Mandarin Salad Dressing.  DELISH!

 

Mandarin Salad Dressing: 

 

¾ cup rice vinegar

¾ cup sugar

¼ tsp celery salt

1 ½ tsp salt

1/8 tsp fresh pepper

 

1 tsp sesame oil

1 cup Canola oil

 

*In a blender combine first 5 ingredients.  While blender is running, slowly pour in oils using a small steady stream.  This slow process of blending in the oil will combine the oil and other ingredients so they don’t separate.  Enjoy!
